Nectarine Halves

This is such a nutritious “stuffed” recipe. It’s a favorite around my house because we always change it. The nectarines can be substituted with other fruits such as, mangoes, apricots or peaches. The nut butters can be substituted with different combinations and the stuffing itself can be diluted with water (adding a little at a time) to make a thick sauce and pour over the fruit halves. It’s a fun recipe to play with for casual to more elegant meals.

 

Nectarines – halved

¼ cup peanut butter

¼ cup sesame tahini

1 tablespoon + 1 teaspoon honey

½ cup carob powder

A few drops of vanilla (optional)

1 lemon

 

Cut ripe fruit in half and lift out the pit. Mix peanut butter, tahini, honey, carob, and vanilla together to form a ball. Break off pieces of this nut butter ball that are a little bigger than the pit and flatten into fruit halves where the pit was. Arrange on a platter and squeeze lemon juice over all of them. Yum!

 

For different ideas:

Sprinkle coconut shavings, chopped nuts, small pieces of candied ginger, or chopped frozen banana pieces.
