Candied Ginger

 Candied ginger is a time-honored favorite for easing the unpleasant feeling of an upset stomach or nausea, promote complete digestion or help reduce cold symptoms with a slice or two of candied ginger.

3 cups pineapple juice

1 cup warm water

2 cup honey

1 cup ginger, peeled and sliced into ¼ inch slices

cinnamon powder

Dissolve honey in the water. Add pineapple juice. Place the sliced ginger into a small pan and add the honey/pineapple water. Simmer until the slices are tender, about 40 minutes. Strain the water out. Roll the ginger slices in cinnamon powder. Dry the slices in a food dehydrator (or in a glass pan in the oven turned to 200 degrees until the slices are mostly dry to the touch, approximately 4 to 5 hours). Stop the drying process before the slices are fully dry, so they are a little chewy.
