Barley Pilaf

3 cups vegetable stock or water

1 cup barley

¼ teaspoon salt

3 tablespoons water

1 onion, sliced

1 carrot, chopped

1 stalk celery, chopped

½ cup green onions, sliced

1 tablespoon soy sauce

1 teaspoon thyme

Simmer vegetable stock, barley, and salt for one hour. Simmer water, onion, carrot, celery, and green onions in a small skillet for about 5 minutes. Add vegetable to cooked barley and add soy sauce and thyme. Simmer the pilaf for 5 minutes, until liquid is absorbed.

Serve with fresh parsley or fresh kale for garnish.
